Confession: All my favorite foods are stinky. I love pickles, olives, fish sauce, sauerkraut, garlic, and onions. Some people hate garlic breath; I say, breathe on me baby!
On a weekly basis, I pick up at least three onions and a bulb of garlic to sustain us through the week. When I meal prep on Sundays, I like to either caramelize or roast at least one whole onion to use in recipes as needed.
Yesterday, I caramelized a batch of onions and decided to whip up a frittata for breakfast this week. It was so delicious and easy, I had to share.

Directions: Preheat the oven to 400 degrees F. Thinly slice your yellow onion. Melt the butter in a cast iron skillet. Add onions to skillet and let cook at medium heat for about 10-15 minutes. Stir only occasionally to give them a chance to caramelize. Your onions are ready when they’ve shrunk up and are a nice shade of caramel brown. While the onions are cooking, crack your eggs into a bowl. Add the cream, thyme, salt, pepper, and beat until fully combined. When the onions are ready, reduce the heat to medium-low and add in the chopped ham. Stir everything around, sweeping the melted butter along the sides of the pan. Pour the whisked eggs on top of everything and let sit for a minute. Transfer to the oven and bake for about 10 minutes, until it puffs up and turns golden. Let cool for a few minutes before serving. You can garnish with gruyere or parmesan cheese, if you’re the dairy eating type. I’m not, so I often eat mine with a side of toast slathered with Earth Balance.
I love frittatas, because they keep well in the fridge. They’re an easy breakfast item to prep ahead of time and then grab on the go as needed. Happy Munching and Happy Monday!
