Sometimes in summer, you just want something simple and refreshing. Easy to make and easy to eat. Cucumbers are one of my favorite summer vegetables; their water content is high and they have an almost clean taste to them. Dressed with nothing but a little vinegar, salt, and sugar, this cucumber salad is the perfect refreshing salad or side dish to munch on all summer along. >
Sweet and Sour Cucumber Salad
2 English cucumbers, very thinly sliced with the peel on
1/2 cup rice vinegar, or white vinegar
2 tablespoons sugar
1 tablespoon salt
1/2 teaspoon black pepper
1/2 teaspoon celery salt .
Directions: Place cucumber slices in colander. Sprinkle with salt and gently stir to coat. Let stand for about 10 minutes, stirring occasionally. Meanwhile, for the dressing, stir vinegar, sugar, pepper, and celery salt in a large bowl until the sugar dissolves. Drain cucumbers well. You can choose to pat them dry, but I didn’t bother. Add cucumbers to dressing and gently stir to coat. Add more seasoning to taste. Refrigerate at least 15 minutes before serving to allow the flavors to soak in. Makes 4-6 servings. A tasty variation would be to switch the celery salt with fresh dill. .
I actually just polished off a bowl of this salad while watching Frozen for the first time. I’ve got to tell you that I was pretty disappointed.
