Comfort Food: Mac & Cheese

There’s not any wrong time of year for comfort food, but something about fall just makes it so much more delicious. The colder it gets outside, the more I want to curl up on the couch with a good book and a bowl of casserole, stew, or something equally hearty and satisfying. One of my favorite meals is my grandmother’s mac & cheese.

The recipe is fairly simple to make, and has completely ruined me for all other mac & cheese. Seriously guys, it’s that good. Here’s what you’ll need for a 2 quart casserole:

1 lb. medium sharp cheddar cheese, cut coarsely

About 3/4 cup shaved Parmesan

2 cups elbow macaroni

1 3/4 cups milk


2 tsp dry mustard

Tabasco sauce

Salt and pepper

Chives (optional)

Preheat the oven to 350°, then cook and drain the macaroni and put it in your casserole dish. Next, heat the milk and cheddar cheese in a saucepan over medium heat. Add the salt, pepper, paprika (don’t be shy with the paprika), dry mustard and Tabasco to the pan and stir as the sauce melts. Once the cheese is completely melted, pour the mixture over the macaroni and stir well. Then add a layer of shaved Parmesan on top, and add some more freshly ground pepper and paprika.

Bake at 350° for 30 minutes. Take it out of the oven and let it rest for about five minutes. You’ll think there’s way too much sauce, but it settles perfectly. If you feel like it, chop up some chives and sprinkle them on top. Enjoy!
