Holy Guacamole

Fresh guacamole is one of my favorite summer snacks—and so easy to whip up in a flash if you have a few friends over. (It’s also a great option to bring to a party if you want to seem like you made more effort than you really did.) I’ve been perfecting this recipe over the years and hope you enjoy it as much as I do!

• 1 large ripe avocado (should give slightly when squeezed)

• 1 Roma tomato, chopped (or two smaller tomatoes stolen from your mom’s garden)

• 1/4 cup very finely chopped red onion

• Half a lime’s worth of juice, freshly squeezed

• One clove of garlic, finely chopped

• Optional: half a jalapeno, diced

• A dash or two of Tabasco sauce

• The secret to my success–plenty of spice! My favorites are cumin, cayenne pepper and paprika, and of course salt and pepper, too. Start off with a little bit of each of these, and mix in more to taste.

Combine all the ingredients in a medium size bowl and stir/blend/mash it into submission with a big spoon (or a pestle, if you’re fancy). When you’re done, it should be fairly creamy, with minimal avocado chunks. Serves 2-3. Best enjoyed with margaritas on a sunny patio.

Tip: if you have some guac left over (crazy, I know), squeeze a bit of lime or lemon juice over the top to keep it from turning brown too quickly.

If you try it, let me know how it turns out!
