Simple Pleasures: Sweet and Sour Cucumber Salad

cucumbersaladSometimes in summer, you just want something simple and refreshing. Easy to make and easy to eat. Cucumbers are one of my favorite summer vegetables; their water content is high and they have an almost clean taste to them. Dressed with nothing but a little vinegar, salt, and sugar, this cucumber salad is the perfect refreshing salad or side dish to munch on all summer along. >

Sweet and Sour Cucumber Salad

Ingredients 
2 English cucumbers, very thinly sliced with the peel on
1/2 cup rice vinegar, or white vinegar
2 tablespoons sugar
1 tablespoon salt
1/2 teaspoon black pepper
1/2 teaspoon celery salt .

Directions: Place cucumber slices in colander. Sprinkle with salt and gently stir to coat. Let stand for about 10 minutes, stirring occasionally. Meanwhile, for the dressing, stir vinegar, sugar, pepper, and celery salt in a large bowl until the sugar dissolves. Drain cucumbers well. You can choose to pat them dry, but I didn’t bother. Add cucumbers to dressing and gently stir to coat. Add more seasoning to taste. Refrigerate at least 15 minutes before serving to allow the flavors to soak in. Makes 4-6 servings. A tasty variation would be to switch the celery salt with fresh dill. .

I actually just polished off a bowl of this salad while watching Frozen for the first time. I’ve got to tell you that I was pretty disappointed. The storyline wasn’t nearly as compelling as all the hype lead me to believe. Anyway, what is your go-to recipe for an easy and refreshing snack or side dish? Popsicles are another favorite of mine. Also, can anyone explain the obsession with Frozen? .

  1. I totally make something like this as an appetizer quite often. I use apple cider vinegar normally, so I think it has a bit of sweetness, so I don’t add sugar… and then I make a sort of seasoning salt with a few spices. I like to add a bit of paprika too. The flavour is nice and it also adds a bit of colour. Yum!

  2. This looks perfect! I love cucumber but often leave them in the fridge because I never know what to do with them besides just slice or spear and eat! I grew up with hungarian-style cucumber salad with loads of sour cream but this seems like the perfect, lighter version!
